Tuna Stuffed Peppadews

I am not sure of the exact definition of Tapas but my definition is ‘Little bites of deliciousness inspired by the Mediterranean.’

Based on my impression of Tapas, I came up with this easy recipe a few years ago and it is always a hit. I was a bit nervous making it this week to serve to my neighbors who summer in Spain and who represent all things Spain! They loved it so now I know its an official keeper and it couldn’t be easier!

Tuna Stuffed Peppadews

Prep Time: about 1 min per peppardew
Cook Time: 12-15 minutes
Yields: about 12

  • 12-15 Mild Pepperdew Peppers- usually found in the olive bar or near the canned olives. I like when I can hand pick them from the olive bar so I get good ones for stuffing!
  • Jar of Tuna Fillets in Olive Oil- I love the Tonnino Brand, but I am sure any brand will do
  • Your favorite marinara sauce- I love Rao's classic marinara sauce.

  1. Preheat oven to 350 degrees F.
  2. Drain peppers. Drain tuna.
  3. Gently stuff tuna into peppers and place peppers in a small oven proof dish.
  4. Top with a small amount of marinara sauce and bake at 350 degrees for about 12-15 minutes or until just heated through.
  5. Serve warm.

Make Ahead

You can make these in advance by preparing until the last step. Simply heat as instructed when ready to serve.
