Stuffed Zucchini

One of my favorite things to do with Zucchini is stuff them. I have stuffed them with risotto, with meatball mixture topped with marinara, with spanish style rice and cheese and so on. Usually, whatever I have leftover, I stuff in a zucchini! With this in my mind, I discovered what is now the best of all the recipes. Taco stuffed zucchini topped with cheddar cheese and taco sauce!

I encourage you to try making this because it is so easy and everyone enjoys it…and we all know that I love meals that can be preparred in advance!

All I did was hollow out a few zucchinis, seasoned them with olive oil, salt, pepper and a dash of chili power and I par cooked them in the oven at 375 degrees. About 10-15 minutes. I pulled them out and then stuffed our leftover taco meat into them, covered them in shredded cheese and cooked until the meat was heated through, cheese was melted nicely and the zucchini finished cooking- so about 15 -20 minutes. I topped them with a drizzle of taco sauce and served.
