Growing up, the potato au gratin we had as kids did not look like the one I made the other night! (pictured above) It came from a box and I think it may have glowed orange if we had eaten in the dark, but I still loved it. Potatoes covered in cheese, powdered cheese or real cheese, You really can’t go wrong!
I see those boxed potatoes in the market and I am always tempted to buy them, but I stopped eating those boxed potatoes a long time ago and I just can’t bring myself to do it. I feel like Ina would be too disappointed in me. So I started working on my own version a few months ago, inspired by Tyler Florence, and I finally nailed it. The flavors are spot on, but getting the potatoes to cook through is the real challenge.
